 One of the restaurant customers of Cape Abilities Farm, The Naked Oyster emphasizes freshness. It uses fish caught the same day; tomatoes and herbs from Cape Abilities Farm in Dennis, greens from E&T Farms in West Barnstable, and organically raised beef from Wolfe’s Neck farm in Maine. The  restaurant also has an extensive wine list and a relaxed bistro atmosphere.

Rick Horton - Executive Chef, The Naked Oyster

A Boston native, Rick moved to the Cape when he was 10. He received degrees from Cape Cod Tech  and Johnson and Wales in Providence, Rhode Island. He spent 10 years as a chef at the Fairfield Inn in Marshfield, Massachusetts then another decade as a sous chef under well-known chef Paul Cunningham at the Willowbend Country Club in Mashpee. He came to The Naked Oyster in 2004 and became the executive chef in 2008. He lives in Cotuit with his wife and two children.

Oysters with Tomato Water

A dozen oysters

Six tomatoes

Salt

 
Chop up the tomatoes then lightly salt them.

Push the juice through a coffee strainer. It should come out clear.

Place the juice in a fine sieve.

Let stand for 24 hours in a refrigerator.

Shuck oysters then place a spoonful of tomato water on each raw oyster and serve

John and Sawyer's Salad Patch

The farm workers say that some of this season's best greens are coming from this patch. Almost everything grown there is on sale only a few feet away at the farm stand.

Sparky Jr. Bee

Sparky is one of the more intellectual bees in the greenhouse. He is always seeking to raise the bees' awareness of  their rich cultural heritage. He has done bee translations of Richard Henry Dana's "Two Years Beefore The Mast"; John Donne's "Death Bee Not Proud," and, of course,  Jean-Paul Sartre's  seminal "Beeing and Nothingness."

Auntie Bee

Everybody figures that in some earlier life Auntie was the Queen of a hive. She has a regal manner and a quiet dignity and although her formal name is Auntie, behind her back the other bees call her the Queen Hum.

Bartle Bee

When Bartle Bee first came to the greenhouse he just stayed in the hive, telling the other workers that he'd "rather not" go out in pollinate. At first they thought it was just jet lag. Then they assumed it was just homesickness for Holland. Finally, they settled on depression. Even bees get down now and then. But with the support of the other bees and some therapeutic buzzing, Bartle Bee is now a happy, thriving bee.

Bee Bee

 Bee Bee, or, as she likes to style herself, "BB,"  is a very fashion conscious bee. She will only visit the most exclusive flowers and only fly with the coolest companions. She likes to be seen in the right places.

Daisy Bee II

Daisy loves flowers, particularly tomato plant flowers. She tells her fellow bees that if she didn't have to take time out to eat and sleep and, of course, chat with her pals, she'd spend all her time going from flower to flower.

Lela

Lela has the most beautiful buzz in the greenhouse.  Melodic and subtle, it sometimes evokes shades of gold on a summer's day and  sometimes sounds like the crisp wind off the sea on a storm swept night.
